			<content:encoded><![CDATA[<p></p><p>Loon Mountain officially closed yesterday — 12 April — for the season. On my way to the restaurant, I spotted two moose in Franconia Notch, and one of the bears was out of hibernation and standing on a perch over at Clark&#8217;s Trading Post. Mount Washington is still covered in snow, the grass is still brown and there are no signs of buds on the trees, but I&#8217;m hopeful that spring green will make an appearance soon!</p>
<p>What does this mean at King&#8217;s Corner? Well, just because the mountain is closed doesn&#8217;t mean we are! We&#8217;re here year &#8217;round, seven days a week, 52 weeks a year. This past weekend we had fresh strawberries and asparagus, and the Southwestern corn chowder and cornbread was flying out the door. We&#8217;ve had visitors from Maryland, the UK and Israel. And of course lots of folks from southern New Hampshire, Massachusetts, Rhode Island, Vermont and Maine. We&#8217;re gearing up for Patriot&#8217;s Day and school vacation week and hoping that we&#8217;ll have some great spring hiking weather for everyone to enjoy.</p>
<p>If you&#8217;re in the area, be sure to stop in and say hello! And we&#8217;ll tell you the best places for moose-spotting.</p>

			<content:encoded><![CDATA[<p></p><p>You asked … and asked … and asked … and finally, we listened. Eggs Benedict is now on the features board at King&#8217;s Corner Cafe! Apparently there&#8217;s conflicting stories as to the <a href="http://en.wikipedia.org/wiki/Eggs_Benedict" target="_blank">origins of the dish</a>, but whoever invented it, we&#8217;re now offering it. Exactly what *is* Eggs Benedict? It starts with a toasted English Muffin base (we use only sandwich-size Thomas&#8217; English Muffins at King&#8217;s Corner). A layer of grilled ham or bacon is added (your choice!) to each half, followed by two poached eggs. The whole thing is then topped off with <a href="http://en.wikipedia.org/wiki/Hollandaise_sauce" target="_blank">Hollandaise sauce</a>.</p>
<p>We also have a new Benedict Omelette for those that prefer their eggs omelette-style instead of poached — a ham and spinach omelette topped with Hollandaise sauce.</p>

			<content:encoded><![CDATA[<p></p><p>The <em>Best of Chefs</em> is an opportunity for local restaurants to showcase themselves to an audience of at least 300 guests, all for a very worthy cause — the <em>Lincoln-Woodstock Community Child Care Center</em>. This is our first year participating, and Steve will be serving his Southwestern Corn Chowder with tortilla chips along with our <a href="http://www.aeroastery.com" target="_blank">A&amp;E Roastery</a> coffee.</p>
<h4>Featuring Southwestern Corn Chowder</h4>
<p>I have to say that Steve&#8217;s Southwestern Corn Chowder is my absolute favorite of all of his soups, chowders and chilis. Preparing to feed a group of 300 people is a bit of a stretch for us &#8211; King&#8217;s Corner Cafe only seats 40 at most. He&#8217;s making about 8 gallons of chowder and has been prepping for the past couple of days &#8211; cutting potatoes, roasting corn, and doing whatever else it is that chefs do.</p>
<h4>and A&amp;E Roastery Columbian Melange Coffee</h4>
<p>As for me — I&#8217;m in charge of the coffee. We&#8217;re bringing some of our Monin Natural Syrups, as well as the Ghirardelli Barista Chocolate Sauce for mochas. We finally ordered some 4oz coffee cups that we&#8217;ll use for the chowder as well as the mini-mochas, and will now have something reasonable to use for espresso-to-go.</p>
<p>Steve still has to print out menus and signage. The big event is Sunday, March 29, from 6-8pm at the Beacon Resort on Route 3 in North Lincoln, NH. A limited number of tickets will be available at the door. A donation of $20 per person is appreciated.</p>

			<content:encoded><![CDATA[<p></p><p>What happens when you take two shots of espresso and add 6-8 ounces of water? You get a cup of coffee that&#8217;s more flavorful and less bitter than a traditionally-brewed cup!<span id="more-684"></span></p>
<h3>How can this be?</h3>
<p>The same amount of ground coffee is used to brew a double-shot of espresso as a cup of coffee; the difference is in the amount of time the grounds are in contact with the water. Less contact means only the best flavor is extracted and the bitterness is left behind. Adding hot water will result in a cup of coffee that&#8217;s similar in brewed strength rather than the more intense espresso, but without any loss in flavor.</p>

The three-day Presidents&#8217; Day weekend was the start of February school vacation week <span id="more-675"></span>for most kids in Massachusetts and Rhode Island, and lots of families headed to Lincoln New Hampshire for a week of skiing, snowboarding, snowshoeing, winter hiking, and relaxing in front of a warm fire while the snow falls outside.</p>
<p>While that may sound too picturesque to be true, we&#8217;ve had fantastic weather this week and it continues to look like a fantasy winter wonderland here in the White Mountains.</p>
<p>We started off the long weekend by introducing our new comment cards. Unlike a traditional comment card where the customer would check off a few boxes and then leave it on the table, these cards are meant to be taken with you as a reminder to spread the word about your great experience at King&#8217;s Corner Café. There&#8217;s also a link to a <a href="http://kingscornercafe.com/2009/02/take-the-survey/" target="_blank">survey</a> which, if completed, will get you a coupon good for $2 off your next meal (there&#8217;s an extra unadvertised bonus if you&#8217;re a local). We ask if we failed to meet your expectations in any way that you <em><span style="color: #ff6600;">let us know</span></em> so we can not only make it right, but ensure that we fix the problem so it doesn&#8217;t happen again.</p>
<p>So what&#8217;s the result so far? While we&#8217;re accustomed to folks telling us how much they enjoyed our food, our staff, and our atmosphere, we&#8217;re noticing lots more people are taking the time to tell us how much they enjoyed their visit. We&#8217;re also starting to see some surveys come in, as well as Yelp reviews being posted.</p>
<p>There&#8217;s still another week of school vacation to go — most New Hampshire and Vermont districts started their vacation today. That means it&#8217;s going to be another busy weekend and busier-than-usual week, and we&#8217;re looking forward to meeting more future ambassadors for King&#8217;s Corner Café.</p>

<h3>Shepherd&#8217;s Pie or Lasagna?</h3>
<p>A huge hit with locals as well as visitors enjoying all that Loon Mountain has to offer has been our Shepherd&#8217;s Pie. Guinness Stout differentiates ours from the rest! Gaining in popularity is our lasagna &#8211; traditional meat lasagna, spinach and meat lasagna, and portobello, spinach and meat lasagna are just three of the recent variations to make an appearance.</p>
<p>Steve says the secret to any great italian dish is a slow-roasted savory sauce. He gets lots of compliments… all of which are taken with sincere humility and appreciation. His tomato sauce is made with sweet Italian sausage, ground beef, and roma tomatoes. The rest of the ingredients  are hush-hush, but you ‘chefs’ out there know what goes into  a great sauce! <h3>Open-faced Roasted Turkey Sandwich</h3>
<p>A long-time favorite is our open-faced turkey sandwich with gravy and cranberry  sauce on the side. Our turkey breast is slow roasted right in our kitchen.  It’s tender and delicious and also makes great sandwiches — you can  have them made in the morning and take them with you to the mountain! Chips and a  pickle come with every sandwich.</p>
<h3>The King&#8217;s Beef Stew</h3>
<p>No Winter menu would be complete without beef stew. The King’s  Beef Stew is made with beef purchased  locally at Wayne’s Market in N. Woodstock. They have really nice cuts  of beef at some pretty competitive prices and it’s always fresh. We highly recommend their butcher shop.</p>
<h3>Crepes</h3>
<p>Last but not least — Crepes! Introduced over a year  ago, the Crepes at King’s Corner have been building momentum as Steve been adding to the list of options for stuffed crepes. The latest offering are crepes stuffed with caramelized bananas and drizzled with Ghirardelli  chocolate syrup. They&#8217;re a huge hit! We also have crepes stuffed  with our own baked apples and drizzled with <a href="http://www.cabinet.com/apps/pbcs.dll/article?AID=/NS/20090123/BEDFORD01/301239905/-1/bedford" target="_blank">Ben’s Pure Maple Syrup</a> as well as Ricotta and cocoa stuffed crepes with  a pure raspberry reduction. So hard to choose!</p>

We always have a big box of biscuits at the ready, <span id="more-549"></span>and oftentimes will also provide a bowl of water for a four-legged friend that&#8217;s been on a long roadtrip.</p>
<p>For some folks, however, biscuits just aren&#8217;t enough. Last weekend we had a family order a bagel sandwich for their pet. From all indications he was very happy with his order.</p>
<p>Another family ordered a ham and bacon sandwich on white for their pooch nicely cut into bite-size chunks.</p>
<p>Two of our very frequent customers had a trio of standard poodles for quite some time. While they only lived a few blocks away, two of the three would come along for the ride. They would patiently sit in the car while their owners enjoyed their breakfast and anxiously await their own special weekend breakfast!</p>
<h4>Doggie D&#8217;oeuvres Recipe</h4>
<ul>
<li><span style="color: #000000;">toast</span></li>
<li><span style="color: #000000;">homefries</span></li>
<li><span style="color: #000000;">bacon, sausage, hash</span></li>
</ul>
<ol>
<li>Mash the homefries with a fork until they are the consistency of lumpy mashed potatoes. Similarly, break sausage and/or bacon into tiny pieces.</li>
<li>Layer the homefries, hash, sausage and bacon on the toast.</li>
<li>Cut into quarters diagonally and serve.</li>
</ol>
<p>Unfortunately all of the dogs have since passed. There are two new puppies, but they&#8217;re restricted to biscuits.</p>
